Description

This Cast Iron Skillet Chicken Pot Pie is a game-changer for busy nights. It delivers that classic, creamy comfort food flavor with a flaky puff pastry crust in just 30 minutes. Perfect for family dinners, this one-pan wonder proves that homemade doesn’t have to be hard.

Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 1 small yellow onion, chopped
  • 2 medium carrots, peeled and sliced
  • 2 stalks celery, chopped
  • 2 cups cooked chicken, shredded or cubed
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream or whole milk
  • 1 cup frozen peas
  • 1 teaspoon fresh thyme (or 1/2 tsp dried)
  • Salt and black pepper to taste
  • 1 sheet frozen puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • Fresh parsley for garnish

Instructions

  1. Prep and Sauté: Preheat oven to 400°F. Melt butter in a cast iron skillet over medium heat. Add onion, carrots, and celery; sauté until soft, about 5 minutes.
  2. Make the Sauce: Sprinkle flour over vegetables and stir for 1 minute. Slowly pour in chicken broth and heavy cream, stirring until the sauce bubbles and thickens.
  3. Fold in Filling: Stir in the cooked chicken, frozen peas, thyme, salt, and pepper. Let cook for 1 minute until hot.
  4. Top with Pastry: Turn off heat. Place puff pastry squares over the mixture. Brush the tops with the beaten egg wash.
  5. Bake: Place skillet in the oven and bake for 15-20 minutes until the pastry is high and golden brown.
  6. Finish: Carefully remove from oven and garnish with fresh parsley before serving.

Notes

Using a rotisserie chicken is a great time-saver for this 30-minute meal. For a crispy crust, avoid stirring the filling once the pastry is placed. If you don’t have a cast iron skillet, any oven-safe baking dish will work.
