  • 1 teaspoon vanilla extract
  • Butter or oil for the pan

Instructions

  1. Mix the Dry Ingredients: In a large bowl, whisk together the flour, protein powder, baking powder, and salt until well combined.
  2. Prepare the Wet Ingredients: In a separate smaller bowl, whisk the egg, milk, honey, and vanilla extract.
  3. Soften the Peanut Butter: If the peanut butter is thick, microwave it for 15 seconds until runny, then whisk it into the wet ingredients.
  4. Combine: Pour the wet mixture into the dry ingredients. Stir with a spatula until just combined. A few small lumps are perfectly fine.
  5. Heat the Pan: Place a non-stick skillet over medium-low heat and add a tiny bit of butter.
  6. Cook: Scoop 1/4 cup of batter per pancake. When bubbles form on top and edges look dry, flip and cook for 1-2 minutes until golden brown.
  7. Assemble: Stack the pancakes with a thin layer of peanut butter between each. Top with melted peanut butter, fresh raspberries, and crushed peanuts.

Notes

Don’t over-mix the batter to keep the pancakes fluffy. For storage, let pancakes cool completely before placing in a sealed container for up to three days. If the pancakes are burning on the outside but raw inside, turn your heat down to low.
