Description

These Double Chocolate Pecan Crunch Donuts are the ultimate homemade indulgence. Featuring a soft, airy donut base dipped in a silky dark chocolate ganache and topped with buttery, toasted pecans, they offer the perfect balance of rich sweetness and satisfying crunch.

Ingredients

Scale
  • 3 and 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet (2 and 1/4 teaspoons) active dry yeast
  • 3/4 cup whole milk, warmed to 105°F
  • 1/4 cup unsalted butter, melted and cooled
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • Oil for frying (vegetable or canola)
  • For the Glaze: 1 cup semi-sweet chocolate chips, 1/2 cup heavy cream, 1 tablespoon light corn syrup
  • For the Topping: 1 cup chopped pecans, 1 tablespoon melted butter, 1 tablespoon brown sugar, pinch of salt

Instructions

  1. Bloom the Yeast: Combine warm milk, yeast, and a pinch of sugar; let sit for 5-10 minutes until foamy.
  2. Mix the Dough: Stir in remaining sugar, butter, egg, vanilla, and salt. Gradually add flour until a soft dough forms.
  3. Knead and Rise: Knead on a floured surface for 5-7 minutes. Place in a greased bowl, cover, and let rise for 1 hour or until doubled.
  4. Shape: Roll dough to 1/2-inch thickness and cut into donut shapes. Let rise again for 30-45 minutes.
  5. Fry: Heat oil to 350°F. Fry donuts for 60-90 seconds per side until golden brown. Drain on paper towels.
  6. Glaze and Top: Toast pecans with butter and brown sugar in a pan. Dip cooled donuts in chocolate ganache and immediately sprinkle with the toasted pecan crunch.

Notes

Ensure the milk is not too hot or it will kill the yeast. For the best texture, do not skip the second rise after shaping the donuts. Store at room temperature in an airtight container for up to two days.
