Ingredients

1 ½ cups grated zucchini

2 cups all-purpose flour

¾ to 1 cup sugar

2 eggs

½ cup vegetable oil

1 tsp baking soda

1–2 tsp cinnamon

1 tsp vanilla extract

½ tsp salt

Optional: ½ cup nuts, ½ cup chocolate chips
Instructions

Preheat oven to 350°F and grease a loaf pan.

Grate zucchini and squeeze out excess water.

Mix eggs, oil, sugar, and vanilla.

In another bowl, combine flour, baking soda, salt, and cinnamon.

Stir dry mix into wet.

Fold in zucchini and extras.
