A refreshing summer salad made with juicy watermelon, creamy feta, fresh mint, and a tangy lime dressing. Quick to prepare and perfect for warm-weather meals or potluck gatherings.
Ingredients
4 cups seedless watermelon, cubed
3/4 cup feta cheese, crumbled
1/2 red onion, very thinly sliced
1/4 cup fresh mint, chopped
1 small cucumber, thinly sliced (optional)
Juice of 1 lime
2 tablespoons olive oil
Salt and black pepper to taste
Instructions
Place watermelon cubes in a large serving bowl.
Add sliced red onion and cucumber (if using).
In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
Drizzle the dressing over the salad and gently toss to combine.
Sprinkle crumbled feta and chopped mint on top.
Serve immediately or chill for 10 minutes for best flavor.
Notes
For a milder onion flavor, soak the red onion slices in cold water for 5–10 minutes before adding.
Use goat cheese or queso fresco if you prefer a different cheese.
Great with grilled chicken or seafood as a light summer side.
