Ingredients

4 cups seedless watermelon, cubed

3/4 cup feta cheese, crumbled

1/2 red onion, very thinly sliced

1/4 cup fresh mint, chopped

1 small cucumber, thinly sliced (optional)

Juice of 1 lime

2 tablespoons olive oil

Salt and black pepper to taste
Instructions

Place watermelon cubes in a large serving bowl.

Add sliced red onion and cucumber (if using).

In a small bowl, whisk together lime juice, olive oil, salt, and pepper.

Drizzle the dressing over the salad and gently toss to combine.

Sprinkle crumbled feta and chopped mint on top.
