  • 1 small seedless watermelon

  • 1 teaspoon lime zest

  • Pinch of sea salt (optional)

For the coconut lime dip:

  • 1 cup coconut yogurt

  • 1 tablespoon honey or maple syrup

  • 1 tablespoon lime juice

  • 1 teaspoon lime zest

  • 1 tablespoon shredded coconut (optional)


Instructions

Step 1: Cut the rind off the watermelon and slice the red flesh into fry-shaped sticks, about ½ inch thick.
Step 2: Sprinkle the watermelon sticks lightly with lime zest and a pinch of sea salt if desired.
Step 3: In a bowl, mix the coconut yogurt, honey or syrup, lime juice, and zest. Add shredded coconut for texture, if using.
Step 4: Chill the dip for 10 minutes to enhance flavor.
Step 5: Arrange the watermelon fries on a platter with the dip in a small bowl for dipping. Serve cold.
