Description
These Walnut Maple Roasted Sweet Potatoes are a cozy, flavorful side dish that combines the natural sweetness of roasted sweet potatoes with the crunch of walnuts and the rich warmth of maple syrup. Perfect for holiday dinners or weeknight meals, this recipe is simple, wholesome, and absolutely delicious.
Ingredients
- 3 medium sweet potatoes, peeled and cubed (about 1-inch pieces)
- 2 tablespoons olive oil
- 1/4 cup pure maple syrup
- 1/2 cup walnuts, roughly chopped
- 1/2 teaspoon ground cinnamon (optional)
- Salt and black pepper to taste
- Fresh parsley, chopped (optional garnish)
Instructions
- Preheat the Oven: Heat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prepare the Sweet Potatoes: In a large bowl, toss the cubed sweet potatoes with olive oil, salt, pepper, and cinnamon if using. Make sure every piece is coated.
- Roast: Spread the sweet potatoes in a single layer on the baking sheet. Roast for 25–30 minutes, flipping halfway, until golden and tender.
- Add Walnuts and Maple Syrup: In the last 5 minutes of roasting, sprinkle walnuts over the potatoes and drizzle with maple syrup. Return to oven until the walnuts are toasted and the syrup is slightly caramelized.
- Serve: Transfer to a serving dish, garnish with fresh parsley if desired, and enjoy warm.
Notes
For extra crunch, toast the walnuts separately before adding them. Adjust the maple syrup to your sweetness preference. This dish pairs beautifully with roasted meats, salads, or even as part of a holiday spread.
