Ingredients
- 1 large head cauliflower, cut into bite-sized florets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and black pepper to taste
- 1/2 cup vegan buffalo sauce
- 4–6 flour or whole wheat tortillas
- 1 cup shredded lettuce or cabbage
- 1/2 cup sliced cucumbers
- Fresh cilantro or parsley (optional)
- Creamy Avocado Sauce:
- 2 ripe avocados
- 2 tablespoons lime juice
- 1 small garlic clove
- 1/4 cup dairy-free yogurt or soaked cashews
- Salt to taste
- Water as needed for blending
Instructions
- Preheat the Oven: Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Season the Cauliflower: Place cauliflower florets in a bowl. Toss with olive oil, garlic powder, paprika, salt, and pepper.
- Roast: Spread cauliflower evenly on the baking sheet. Roast for 20–25 minutes, flipping halfway, until golden and crispy.
- Add Buffalo Sauce: Transfer roasted cauliflower to a bowl, toss with buffalo sauce, then return to the oven for 5 more minutes.
- Make the Avocado Sauce: Blend avocados, lime juice, garlic, dairy-free yogurt or cashews, salt, and water until smooth and creamy.
- Warm Tortillas: Lightly warm tortillas so they are soft and easy to roll.
- Assemble Wraps: Add lettuce, buffalo cauliflower, cucumber slices, and drizzle with avocado sauce. Roll tightly and serve.
Notes
For extra crispy cauliflower, avoid overcrowding the pan. Adjust the spice level by using mild or hot buffalo sauce. These wraps are best assembled just before serving to keep the tortillas from getting soggy.
