  • 1 tsp. Italian Seasoning (oregano, basil, thyme)
  • Salt and Pepper, to taste
  • Olive Oil (for cooking)

Instructions

  • Cook the Sausage:
    • In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the sausage, breaking it into smaller pieces as it cooks until browned (about 5-7 minutes). Remove and set aside.
  • Add Aromatics:
    • In the same pot, add the diced onion and minced garlic. Sauté until the onions are translucent and the garlic is fragrant (2-3 minutes).
  • Deglaze:
    • Pour in the broth, scraping the bottom of the pot to release any browned bits. This adds depth to the flavor.
  • Season and Simmer:

  • Add Tortellini and Spinach:
