Description

These Buffalo Chicken Roll-Ups are the secret weapon of party hosting. They are a bold, creamy, and spicy no-bake appetizer that combines tender chicken and zesty buffalo sauce into one perfect bite—ready in just 20 minutes.

Ingredients

Scale
  • 2 cups shredded cooked chicken (rotisserie chicken works great)
  • 8 oz cream cheese, softened to room temperature
  • 1/2 cup buffalo wing sauce (mild, medium, or hot)
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup green onions, thinly sliced
  • 1/2 teaspoon garlic powder
  • 4 to 5 large flour tortillas (burrito size)
  • Optional: 1/4 cup ranch or blue cheese dressing for dipping

Instructions

  1. Prepare the Filling: In a medium bowl, beat the softened cream cheese until fluffy. Mix in the buffalo sauce and garlic powder until smooth.
  2. Fold in Ingredients: Gently fold in the shredded chicken, cheddar cheese, and green onions until everything is evenly coated.
  3. Assemble the Rolls: Lay a tortilla flat and spread a thin, even layer of the mixture all the way to the edges. Roll the tortilla up as tightly as possible.
  4. Chill: Wrap each roll in plastic wrap and refrigerate for 30-60 minutes. This makes them much easier to slice cleanly.
  5. Slice and Serve: Use a sharp serrated knife to trim the ends, then slice the rolls into 1-inch thick pinwheels.
  6. Garnish: Arrange on a platter and top with extra green onions if desired.

Notes

Pat your chicken dry before mixing to prevent soggy tortillas. For a milder version, swap some buffalo sauce for extra ranch dressing. These can be made a day in advance for even better flavor melding.
