Description

This gourmet roasted potato pizza is an elegant, artisan-style flatbread that challenges everything you know about comfort food. Featuring earthy purple and gold fingerling potatoes, a garlic-infused oil base, and a silky ball of fresh burrata, it’s a sophisticated masterpiece that is surprisingly easy to make in your own kitchen.

Ingredients

Scale
  • 1 lb pizza dough (homemade or store-bought)
  • 2 tablespoons cornmeal (for dusting)
  • 34 small purple potatoes, sliced paper-thin
  • 34 small gold fingerling potatoes, sliced paper-thin
  • 1 ball fresh burrata cheese
  • 1/2 cup fresh mozzarella, shredded
  • 2 tablespoons freshly grated parmesan cheese
  • 3 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 23 scallions, thinly sliced
  • Sea salt and freshly cracked black pepper to taste

Instructions

  1. Prepare the Heat: Pre-heat your oven to its highest setting (usually 500°F). If using a pizza stone, place it in the oven while heating.
  2. Infuse the Oil: In a small pan over low heat, warm the olive oil and minced garlic for 60 seconds until fragrant but not brown.
  3. Prep the Potatoes: Wash and slice potatoes into paper-thin rounds. Toss with a small amount of olive oil, salt, and pepper.
  4. Shape the Crust: On a floured surface, stretch the dough into a 12-inch circle. Place on a pan or parchment dusted with cornmeal.
  5. Layer and Assemble: Brush the garlic oil over the dough. Sprinkle with shredded mozzarella, then layer the potato slices in a circular pattern. Top with half of the scallions.
  6. Bake: Slide the pizza into the oven and bake for 10-15 minutes until the crust is golden-brown and potatoes are curled at the edges.
  7. The Final Garnish: Place the cold burrata ball in the center and break it open. Top with remaining scallions and parmesan cheese before serving.

Notes

Use a mandoline slicer to get the potatoes paper-thin for maximum crispness. If burrata is unavailable, a dollop of fresh ricotta works as a great substitute. Avoid using a rolling pin to keep the crust light and bubbly.
