Instructions

  1. Prepare the Potatoes: Wash potatoes and use a sharp knife or mandoline to cut into 1/8-inch thick rounds.
  2. Make the Garlic Herb Roux: Melt butter in a saucepan over medium heat. Sauté garlic and onions for 3 minutes until soft. Whisk in flour for 1 minute to create a roux.
  3. Create the Cream Sauce: Slowly whisk in milk and heavy cream. Add salt, pepper, nutmeg, thyme, and rosemary. Simmer for 5 minutes until thickened, then stir in 1 cup of Gruyère until melted.
  4. Assemble the Dish: Grease a 9×13 inch baking dish. Layer one-third of the potatoes, then one-third of the sauce. Repeat layers until finished.
