Description
Have you ever wondered why the crackers you buy at the store never taste quite as fresh or flavorful as the ones you dream about? These Homemade Rosemary Crackers combine the salty, bold flavor of Parmesan cheese with the fresh, pine-like aroma of rosemary for a gourmet snack that is ready in less than an hour.
Ingredients
- 1 1/2 cups all-purpose flour (or substitute half with whole wheat flour)
- 1/2 cup grated Parmesan cheese (or Pecorino Romano)
- 1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 tablespoons cold unsalted butter, cut into small cubes
- 1/3 cup cold water
Instructions
- Prep the Oven: Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, grated Parmesan, chopped rosemary, salt, and black pepper.
- Cut in Butter: Add the cold, cubed butter. Use your fingers or a pastry cutter to mix until it looks like tiny crumbs.
- Form the Dough: Slowly add the cold water, one tablespoon at a time. Mix until a dough forms. Do not overmix!
- Roll and Cut: On a floured surface, roll the dough thin (about 1/8 inch). Use a knife or pizza cutter to cut into squares.
- Bake: Place on the baking sheet and poke holes with a fork. Bake for 15-20 minutes until edges are golden brown.
- Cool: Let the crackers cool completely to ensure maximum crunch.
Notes
The thinner you roll the dough, the crunchier your crackers will be. If using dried rosemary, reduce the amount to 1 teaspoon as the flavor is much stronger. Store in an airtight container for up to five days.
