Ingredients
- 2 thick slices sourdough bread

Instructions
- Prepare the Bread: Melt butter in a pan over medium heat. Toast sourdough slices until golden brown on both sides, about 2 minutes per side. Set aside.
- Cook the Meat: In the same pan, brown the ham or Canadian bacon for 1 minute per side until edges are crisp. Move to the side of the pan.
- Fry the Egg: Crack the egg into the center. Gently break the yolk with a spatula so it spreads. Season with salt and pepper. Cook for 2 minutes, then flip.
- Melt the Cheese: Immediately place the cheese slice on the egg. Cover with a lid for 30 seconds to steam and melt.
- Assemble: Mash the avocado onto the bottom slice of toast with a pinch of salt. Layer the tomato slices, then the egg/meat/cheese stack. Top with the second slice of toast.
Notes
Place tomato slices directly on the avocado to prevent the bread from getting soggy. Cut the sandwich diagonally for a professional cafe-style presentation. If you prefer heat, swap the cheddar for pepper jack or add a swipe of spicy mayo.
