Ingredients
- Mushroom Gravy Chicken:
- 6 boneless, skinless chicken thighs (about 2 lbs)
- 8 oz cremini mushrooms, sliced

- 3 cloves garlic, minced
- 2 cups chicken broth
- ½ cup heavy cream
- 2 tbsp all-purpose flour
- 2 tbsp butter + 1 tbsp olive oil
- 1 tsp fresh thyme

- Buttery Mashed Potatoes:
- 2 lbs Russet or Yukon Gold potatoes, peeled and cubed
- 4 tbsp butter
- ½ cup warm milk
- Glazed Carrots:
- 1 lb carrots, peeled and cut into 2-inch pieces
- 1 tbsp butter
- 1 tbsp brown sugar
- ¼ cup water
Instructions
- Glaze the Carrots: In a skillet, combine carrots, 1 tbsp butter, brown sugar, and water. Simmer covered for 15-20 minutes. Uncover and cook over medium-high heat until the liquid evaporates into a shiny glaze.
- Prepare the Mash: Boil potato chunks in salted water for 15-20 minutes until tender. Drain and return to the pot over low heat for 1-2 minutes to dry. Mash with 4 tbsp butter and warm milk until creamy.
- Sear the Chicken: Season chicken with salt and pepper. Heat oil in a large skillet and sear chicken for 5-7 minutes per side until golden (165°F). Remove and tent with foil.
- Make the Gravy: In the same skillet, sauté mushrooms and onion in 2 tbsp butter for 5-7 minutes. Add garlic and thyme for 60 seconds.
- Thicken and Finish: Stir in flour for 1-2 minutes. Slowly whisk in chicken broth, deglazing the pan. Stir in heavy cream and simmer until thickened. Return chicken to the skillet to warm through.

Don’t overcrowd the pan when searing the chicken to ensure a proper golden crust. For the fluffiest potatoes, ensure they are dried briefly in the hot pot after draining. For a gluten-free gravy, swap the flour for a cornstarch slurry at the end.
