1 pound ground beef or turkey
1 medium onion, diced
1 can (15 oz) black beans, undrained
1 can (15 oz) kidney beans, undrained
1 can (15 oz) corn, undrained
1 can (14.5 oz) diced tomatoes
1 can (8 oz) tomato sauce
2 cups beef broth (or chicken broth)
1 packet taco seasoning
1 packet ranch seasoning
Salt and pepper to taste

Instructions

Brown the Meat: In a large pot over medium heat, cook the ground beef or turkey until no longer pink. Drain excess grease.
Add Onion: Stir in the diced onion and cook for 3 to 4 minutes until softened.
Season: Sprinkle in the taco seasoning and ranch seasoning. Stir to coat the meat mixture well.
Add Canned Ingredients: Pour in the black beans, kidney beans, corn, diced tomatoes, and tomato sauce. Stir to combine.
Add Broth: Stir in the beef broth and mix until everything is well combined.
Simmer: Bring to a boil, then reduce heat and simmer for 15 to 20 minutes to blend the flavors.
Taste and Adjust: Add salt and pepper to taste. Simmer longer if you want deeper flavor.
Serve: Ladle into bowls and top with shredded cheese, sour cream, tortilla chips, and fresh cilantro.

Notes

You can make this soup spicier by adding jalapeños, chili powder, or hot sauce. For a thicker soup, use less broth. This recipe freezes very well and tastes even better the next day.
