- 1 cup refried beans (or black beans)
- 2 cups shredded Mexican blend cheese
- 1 1/2 cups salsa or enchilada sauce
- 1/2 cup sour cream (for topping)
- 1/4 cup chopped green onions
- Fresh cilantro, for garnish
Instructions
- Preheat the Oven: Set oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Layer the Base: Spread a thin layer of salsa or enchilada sauce on the bottom of the dish. Arrange 6 taquitos in a single layer on top.
- Add the Filling: Spread refried beans over the taquitos, sprinkle with cheese, and drizzle with more salsa.
- Repeat the Layers: Add the remaining taquitos, then more beans, salsa, and cheese.
- Bake: Cover with foil and bake for 20 minutes. Remove foil and bake another 10 minutes until cheese is golden and bubbly.
- Top and Serve: Let rest for 5 minutes, then add sour cream, green onions, and cilantro before serving.
Notes
For extra spice, use salsa verde or pepper jack cheese. To make ahead, assemble the casserole, cover, and refrigerate for up to 24 hours before baking. Serve with guacamole, rice, or a simple salad for a complete meal.
