Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 medium sweet potatoes, peeled and cubed

- 2 cans (15 oz each) black beans, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 2 tablespoons tomato paste
- 3 cups vegetable broth
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- ½ teaspoon dried oregano
- Salt and pepper to taste
- Juice of ½ lime (optional)

Instructions
- Sauté the aromatics: Heat olive oil in a large pot over medium heat. Add onion and cook for 3–4 minutes until softened. Stir in garlic and cook for another 30 seconds.
- Add the vegetables: Add diced sweet potatoes and bell pepper. Stir and cook for 5 minutes to begin softening them.
- Season and build flavor: Sprinkle in chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir to coat the vegetables evenly. Add tomato paste and cook for 1–2 minutes.
- Add the base: Pour in diced tomatoes, black beans, and vegetable broth. Stir well and bring to a gentle boil.
- Simmer: Reduce heat to low and let the chili simmer uncovered for 20–25 minutes, stirring occasionally, until the sweet potatoes are tender and the chili thickens.
- Finish and serve: Taste and adjust seasoning. Add a squeeze of lime juice if desired. Serve warm with toppings like cilantro, avocado, or sour cream.
Notes
For a creamier texture, mash a few of the sweet potatoes or beans right in the pot. This chili tastes even better the next day as the flavors develop. You can also add corn, quinoa, or kale for extra texture and nutrition.
