Ingredients
- 8–10 large eggs
- 1/2 cup milk or cream (any kind)
- 3 cups fresh spinach (or 1 cup frozen spinach, thawed and drained)
- 1 cup crumbled feta cheese
- 1 tablespoon olive oil or butter
- 1/2 cup cherry tomatoes or sun-dried tomatoes (optional)
- 1 clove garlic, minced (optional)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon dried oregano or Italian seasoning
Instructions
- Prep the Oven and Dish: Preheat the oven to 350°F (175°C). Lightly grease a baking dish with butter or olive oil.
- Cook the Spinach: In a skillet over medium heat, sauté fresh spinach until wilted, about 2–3 minutes. If using frozen spinach, thaw and squeeze out excess moisture.
- Whisk the Eggs: In a medium bowl, whisk the eggs, milk, salt, pepper, and seasoning until smooth and well combined.
- Layer the Base: Spread the cooked spinach evenly across the bottom of the baking dish. Add the garlic and tomatoes if using.
- Add the Feta: Sprinkle the feta cheese evenly over the spinach layer.
- Pour the Eggs: Slowly pour the egg mixture over the spinach and feta, making sure the eggs spread throughout the dish.
- Bake: Place the dish in the oven and bake for 25–30 minutes, or until the eggs are set and the center is firm.
- Cool and Serve: Let the bake rest for 5 minutes before slicing. Serve warm, garnished with more feta or fresh herbs if desired.
Notes
For best texture, remove as much moisture as possible from the spinach to prevent a watery bake. Add mushrooms, peppers, or cooked sausage for variation. This dish reheats well and is perfect for meal prep throughout the week.
