Instructions

  1. Prep the Oven and Dish: Preheat the oven to 350°F (175°C). Lightly grease a baking dish with butter or olive oil.
  2. Cook the Spinach: In a skillet over medium heat, sauté fresh spinach until wilted, about 2–3 minutes. If using frozen spinach, thaw and squeeze out excess moisture.
  3. Whisk the Eggs: In a medium bowl, whisk the eggs, milk, salt, pepper, and seasoning until smooth and well combined.
  4. Layer the Base: Spread the cooked spinach evenly across the bottom of the baking dish. Add the garlic and tomatoes if using.
  5. Add the Feta: Sprinkle the feta cheese evenly over the spinach layer.
  6. Pour the Eggs: Slowly pour the egg mixture over the spinach and feta, making sure the eggs spread throughout the dish.
  7. Bake: Place the dish in the oven and bake for 25–30 minutes, or until the eggs are set and the center is firm.
