Description

These Snickerdoodle Truffles are soft, creamy, no-bake treats bursting with warm cinnamon and sugar flavor. Made with crushed snickerdoodle cookies, cream cheese, and a smooth white chocolate coating, they come together in minutes and taste just like your favorite cookies—only richer, softer, and melt-in-your-mouth delicious. Perfect for holidays, parties, gifting, or anytime snacking.

Ingredients

Scale
  • 2 cups crushed snickerdoodle cookies
  • 6 oz cream cheese, softened
  • 1 teaspoon ground cinnamon
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 12 oz white chocolate or melting wafers
  • Cinnamon sugar for sprinkling

Instructions

  1. Make the Cookie Base: Add crushed snickerdoodle cookies, cream cheese, cinnamon, sugar, and vanilla to a bowl. Mix until smooth and fully combined.
  2. Shape the Truffles: Scoop the mixture into small balls and roll until smooth. Place on a parchment-lined tray.
  3. Chill: Refrigerate the rolled truffles for at least 20 minutes so they firm up.
  4. Melt the Chocolate: Warm white chocolate in the microwave in short intervals, stirring until smooth.
  5. Dip and Coat: Use a fork to dip each chilled truffle into the melted chocolate. Tap off extra and place back on parchment.
  6. Finish: Sprinkle cinnamon sugar on top before the chocolate sets. Chill again until firm.

Notes

Use very finely crushed cookies for a smooth truffle texture. If the mixture feels too soft, chill the dough before rolling. For perfect dipping, make sure the truffles are cold and the chocolate is warm and fluid. Store in the refrigerator for up to one week or freeze for up to two months.
