Ingredients
- 2–3 medium sweet potatoes, peeled and diced
- 2 cans (15 oz each) black beans or kidney beans, drained and rinsed
- 2 cans (14.5 oz each) diced tomatoes, undrained (fire-roasted optional)
- 3 cups vegetable broth (or chicken broth)
- 1 medium onion, chopped
- 2 bell peppers (any color), chopped
- 3 cloves garlic, minced
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 1 tsp smoked paprika
- 1/4 tsp ground cinnamon (optional)
- 1 cup corn kernels (optional)
- Salt and pepper to taste

Instructions
- Prep the Veggies: Peel and dice the sweet potatoes. Chop the onion, bell peppers, and mince the garlic.
- Layer in the Slow Cooker: Add sweet potatoes, beans, tomatoes, broth, onion, bell peppers, garlic, and all spices. Stir to combine.
- Cook: Cover and cook on low for 6–8 hours or high for 3–4 hours, until the sweet potatoes are tender.
- Taste and Adjust: About 30 minutes before serving, taste and adjust seasoning. Add extra broth if chili is too thick.
