  • 1 medium onion, chopped
  • 2 bell peppers (any color), chopped
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1/4 tsp ground cinnamon (optional)
  • 1 cup corn kernels (optional)
  • Salt and pepper to taste
  • Optional toppings: sliced avocado, shredded cheese, fresh cilantro, sour cream, tortilla chips

Instructions

  1. Prep the Veggies: Peel and dice the sweet potatoes. Chop the onion, bell peppers, and mince the garlic.
  2. Layer in the Slow Cooker: Add sweet potatoes, beans, tomatoes, broth, onion, bell peppers, garlic, and all spices. Stir to combine.
  3. Cook: Cover and cook on low for 6–8 hours or high for 3–4 hours, until the sweet potatoes are tender.
  4. Taste and Adjust: About 30 minutes before serving, taste and adjust seasoning. Add extra broth if chili is too thick.

Notes
