  • 1 teaspoon Italian seasoning
  • 8 oz ricotta cheese (or cottage cheese)
  • 1 egg
  • 1/2 cup grated Parmesan cheese
  • 3 cups shredded mozzarella cheese
  • 912 lasagna noodles (regular or no-boil)
  • Fresh parsley or basil, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Cook the Meat Sauce: In a skillet, brown the ground beef with onion and garlic. Drain excess fat. Stir in marinara sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  2. Mix the Cheese Layer: In a medium bowl, combine ricotta cheese, egg, Parmesan, and 1 cup mozzarella.
  3. Prepare the Slow Cooker: Spray the inside with nonstick cooking spray.
  4. Assemble: Spread a thin layer of meat sauce on the bottom. Add a layer of noodles (breaking to fit), then spread ricotta mixture, sprinkle mozzarella, and top with more sauce. Repeat layers until ingredients are used, finishing with sauce and mozzarella on top.
  5. Cook: Cover and cook on LOW for 4–5 hours or until noodles are tender and cheese is bubbly.
  6. Rest and Serve: Let lasagna rest for 15 minutes before slicing. Garnish with fresh parsley or basil.

Notes

For a vegetarian version, swap the meat with sautéed mushrooms, zucchini, or spinach. To freeze, slice cooled lasagna into portions, wrap tightly, and freeze up to 2 months. Reheat in the oven or microwave. Letting the lasagna rest before cutting helps the layers set for cleaner slices.
