Description

  • 1 medium onion, chopped
  • 8 oz fresh mushrooms, sliced (or canned mushrooms, drained)
  • 2 cloves garlic, minced
  • 1 cup chicken broth (low-sodium if preferred)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • 1 cup sour cream
  • 12 oz egg noodles (or rice/mashed potatoes for serving)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Layer the Chicken: Place chicken in the bottom of the slow cooker. Season lightly with salt, pepper, and paprika.
  2. Add Vegetables: Top with onions, mushrooms, and garlic.
  3. Create the Sauce: In a bowl, whisk together chicken broth and cream of mushroom soup. Pour evenly over the chicken and veggies.
  4. Slow Cook: Cover and cook on low for 6 hours or high for 4 hours, until chicken is tender.
  5. Shred and Stir: Shred the chicken directly in the slow cooker or leave in chunks. Stir everything well to combine.
  6. Finish with Sour Cream: Just before serving, stir in the sour cream to create a creamy sauce.
  7. Serve: Spoon the chicken stroganoff over cooked egg noodles, rice, or mashed potatoes. Garnish with fresh parsley.

Notes

For a thicker sauce, remove the slow cooker lid during the last 30 minutes to let the liquid reduce. Don’t add sour cream until the end to prevent curdling. You can also add peas, spinach, or carrots for extra veggies. Store leftovers in the fridge for up to 3 days or freeze for 2 months.
