Ingredients
- 2 lbs boneless, skinless chicken breasts or thighs
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 4 cups chicken broth
- 1 can cream of chicken soup (10.5 oz)
- 1 cup frozen peas (optional)
- 1 can refrigerated biscuit dough (8 count)
- Fresh parsley, chopped, for garnish
Instructions
- Prepare the Base: Place chicken in the bottom of the slow cooker. Top with onion, carrots, celery, and garlic. Sprinkle with thyme, salt, and pepper. Add bay leaf.
- Add Liquids: Pour in chicken broth and cream of chicken soup. Stir gently to combine.
- Cook the Chicken: Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is tender.
- Shred and Return: Remove chicken, shred with two forks, and return it to the slow cooker. Stir in frozen peas if using.
- Add the Dumplings: Cut biscuit dough into small pieces and drop into the slow cooker. Stir gently to spread them out.
- Finish Cooking: Cover and cook on high for 1 hour, or until dumplings are fluffy and fully cooked.
- Serve and Garnish: Ladle into bowls, sprinkle with parsley, and enjoy warm.
Notes
For a richer broth, stir in 1/4 cup heavy cream before serving. If you prefer homemade dumplings, you can make your own dough with flour, baking powder, milk, and butter. To thicken the broth, mix 1 tablespoon cornstarch with 2 tablespoons water and add during the last 30 minutes of cooking.
