Ingredients
3 ripe peaches, sliced
1/2 red onion, thinly sliced
1 English cucumber, thinly sliced
4 cups mixed greens (arugula, spinach, or spring mix)
1/2 cup crumbled feta cheese
A handful of fresh mint or basil leaves
2 tablespoons extra virgin olive oil
1 tablespoon balsamic glaze (optional)
Instructions
Step 1: Wash and slice the peaches into thin wedges.
Step 2: Thinly slice the red onion and cucumber.
Step 3: On a serving platter, arrange the mixed greens.
Step 4: Layer cucumber and onion slices over the greens.
Step 5: Add the sliced peaches on top.
Step 6: Sprinkle the feta cheese and torn fresh herbs over everything.
Step 7: Drizzle with olive oil and optional balsamic glaze.
Step 8: Toss gently and serve immediately.
Notes
For a milder onion flavor, soak red onion slices in cold water for 5 minutes.
Nectarines can replace peaches if preferred.
