Description

This Simple Homemade Chicken Alfredo with Broccoli and Mushrooms is a creamy, comforting, and restaurant-quality meal you can make at home in under 30 minutes. Perfect for busy weeknights, this recipe features tender chicken, fresh broccoli, and savory mushrooms in a luscious, garlic-infused Parmesan sauce.

Ingredients

Scale
  • 12 ounces fettuccine pasta
  • 1 pound boneless, skinless chicken breasts, sliced
  • 2 cups fresh broccoli florets
  • 8 ounces cremini mushrooms, sliced
  • 2 tablespoons olive oil
  • 1/2 cup unsalted butter
  • 2 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1 cup fresh grated Parmesan cheese
  • 1/4 teaspoon nutmeg (optional)
  • Salt, black pepper, and red pepper flakes to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the Pasta: Boil fettuccine in salted water until al dente. Reserve 1 cup of pasta water, then drain.
  2. Prepare the Chicken and Veggies: Heat olive oil in a large skillet over medium-high heat. Cook chicken until golden and cooked through; set aside. In the same pan, sauté mushrooms and broccoli until tender; set aside with the chicken.
  3. Create the Creamy Sauce: Melt butter in the skillet over medium-low heat. Add minced garlic and cook for 1 minute. Pour in heavy cream and simmer for 2-3 minutes.
  4. Emulsify the Sauce: Remove from heat and slowly whisk in the Parmesan cheese until smooth. Add nutmeg and red pepper flakes if using.
  5. Combine and Serve: Add pasta, chicken, and vegetables to the sauce. Toss until well coated, adding reserved pasta water if needed for consistency. Garnish with parsley and enjoy!

Notes

Always grate your own Parmesan cheese for the smoothest sauce. Remove the pan from heat before adding cheese to prevent graininess. Use the reserved pasta water to adjust the sauce thickness to your preference.
