Description

These Sausage Rolls with Hot Honey and Thyme are golden, flaky, juicy, and full of sweet heat. A buttery puff pastry shell wraps around seasoned sausage and bakes until crisp, then gets finished with a warm drizzle of hot honey and fresh thyme. Fast, simple, and perfect for holidays, parties, or everyday snacking.

Ingredients

Scale
  • 1 sheet puff pastry, thawed
  • 1 lb sausage meat (pork, chicken, turkey, or plant-based)
  • 3 tablespoons hot honey, divided
  • 1 tablespoon fresh thyme leaves
  • Salt and black pepper, to taste
  • 1 egg, beaten (for egg wash)
  • Flour, for dusting

Instructions

  1. Prep the Oven: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix the Filling: In a bowl, combine sausage meat, 2 tablespoons hot honey, thyme leaves, salt, and pepper. Mix until fully blended.
  3. Prepare the Pastry: Lightly flour your work surface and unroll the puff pastry. Cut into long strips, about 4–5 inches wide.
  4. Add the Filling: Spoon the sausage mixture into long, even lines down the center of each strip.
  5. Roll and Seal: Fold the pastry over the filling and press edges to seal. Crimp with a fork to secure.
  6. Slice: Cut into smaller rolls or leave whole, depending on serving preference.
  7. Brush and Bake: Place rolls on the baking sheet. Brush tops with egg wash. Bake 20–25 minutes until puffed, golden, and cooked through.
  8. Finish with Honey: While warm, drizzle the remaining hot honey over the rolls.
  9. Serve: Enjoy warm with mustard, extra honey, or your favorite dip.

Notes

Keep the pastry cold for best puffing. Do not overfill the rolls to prevent bursting. Add cheddar or jalapenos for variations. For extra crispness, bake on the top rack for the last 5 minutes.
