Description

A hearty and comforting British-style pan-fry featuring crispy sausages, golden chips, mushy peas, and rich brown gravy. This one-pan wonder is easy to make, satisfying, and full of flavor—perfect for weeknights or lazy weekends.


Ingredients

  • 4 pork sausages (or your favorite kind)

  • 2 large potatoes (or frozen oven chips)

  • 1 cup frozen peas

  • 2 tablespoons butter

  • 2 tablespoons milk

  • 1 tablespoon olive oil

  • 1 cup beef or onion gravy (store-bought or homemade)

  • Salt and pepper to taste

  • Optional: chopped parsley for garnish


Instructions

  • Prepare the Chips

    • If using fresh potatoes: Peel and slice into thick chips. Parboil for 5–7 minutes, drain, and let dry.

    • Heat oil in a skillet over medium heat. Add the chips and cook until golden and crispy, turning occasionally. Remove and set aside.

  • Cook the Sausages

    • In the same pan, cook sausages over medium heat until browned and cooked through (about 12–15 minutes). Remove and set aside.

  • Make the Mushy Peas

    • Boil the peas in a small pot for 3–4 minutes. Drain and mash with butter and milk. Season with salt and pepper.

  • Warm the Gravy

    • Heat gravy in a small saucepan or microwave until hot.

  • Combine Everything in the Pan

    • Add the sausages and chips back into the skillet. Pour over the hot gravy and gently toss to coat everything. Spoon the mushy peas on the side or mix them in.

 

Notes

  • Substitute sweet potatoes for a twist.

  • Use vegetarian sausages for a meat-free version.

  • Homemade gravy adds a richer flavor but store-bought works well for convenience.
