Ingredients
- 2 cups cherry or grape tomatoes (halved if large)
- 2 tablespoons olive oil

- 2 tablespoons balsamic glaze (or homemade reduction)
Instructions
- Roast the Tomatoes: Preheat oven to 400°F (200°C). Place tomatoes on a parchment-lined baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20–25 minutes until caramelized and slightly bursting.
- Prepare the Cheese: Slice fresh mozzarella into rounds, or halve bocconcini.
- Wash the Basil: Rinse basil leaves and pat dry gently.
- Assemble the Salad: On a large platter, layer mozzarella slices and roasted tomatoes. Tuck in fresh basil leaves, drizzle with olive oil and balsamic glaze, and finish with a sprinkle of salt and pepper.
