Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  2. Prep the Sweet Potatoes: Peel (optional) and cut the sweet potatoes into even 1-inch cubes so they cook evenly.
  3. Season: In a large bowl, toss the sweet potatoes with olive oil, cinnamon, and salt until fully coated.
  4. Roast: Spread the cubes in a single layer on the baking sheet. Roast for 25–30 minutes, flipping halfway through, until golden brown and tender inside.
  5. Finish with Honey: Remove from the oven and immediately drizzle with honey. Toss gently to coat.

Notes

Don’t drizzle the honey before roasting—it may burn. For extra flavor, try adding nutmeg, pumpkin spice, or a sprinkle of chopped pecans before serving. To make ahead, cut the sweet potatoes a day early and store them in cold water until ready to roast.
