  • 2 tablespoons sugar
  • 1 teaspoon lemon juice

  • 1/2 cup unsalted butter, melted

  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup cocoa powder
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or chopped chocolate

Instructions

  1. Make the Raspberry Swirl: In a small saucepan, combine raspberries, sugar, and lemon juice. Cook over medium heat until the berries break down and the mixture thickens. Mash with a fork and allow to cool.
  2. Make the Brownie Batter: Whisk melted butter and sugar together. Add eggs one at a time, mixing well. Stir in vanilla extract. In another bowl, combine cocoa powder, flour, and salt. Add dry ingredients to wet ingredients and mix until smooth. Fold in chocolate chips.
  3. Prepare the Pan: Line an 8×8-inch pan with parchment paper. Spread the brownie batter evenly.
  4. Add the Swirl: Spoon raspberry sauce over the batter. Use a toothpick or knife to swirl gently. Add a few whole raspberries on top.
  5. Bake: Bake at 350°F (175°C) for 25–30 minutes. The edges should be set while the center remains soft for a fudgy texture. Cool before slicing.
  6. Serve: Slice into squares and top with fresh raspberries.

Notes

Do not overmix the swirl or the colors will blend too much. Frozen raspberries can be used if thawed and drained. For variation, add white chocolate chips or a cream cheese swirl.
