Instructions
- Prep the Potatoes: Peel and cube the purple sweet potatoes into even pieces.
- Boil: Add potatoes to a pot, cover with water, add a pinch of salt, and boil 15–20 minutes until fork-tender.
- Drain: Drain well and allow steam to release for 1 minute.
- Mash: Transfer potatoes to a bowl and mash until mostly smooth.
- Add Coconut Milk: Warm the coconut milk and pour in slowly while mashing to reach your desired creaminess.
- Season: Stir in lime juice, salt, and black pepper to taste.

Notes
For the creamiest texture, warm the coconut milk before adding. Adjust the lime juice to taste. If potatoes seem too thick, add extra coconut milk in small amounts.
