Instructions

  1. Prep the Potatoes: Peel and cube the purple sweet potatoes into even pieces.
  2. Boil: Add potatoes to a pot, cover with water, add a pinch of salt, and boil 15–20 minutes until fork-tender.
  3. Drain: Drain well and allow steam to release for 1 minute.
  4. Mash: Transfer potatoes to a bowl and mash until mostly smooth.
  5. Add Coconut Milk: Warm the coconut milk and pour in slowly while mashing to reach your desired creaminess.
  6. Season: Stir in lime juice, salt, and black pepper to taste.
