- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract (for filling)
Instructions
- Prepare the Oven: Preheat to 350°F (175°C) and line two baking sheets with parchment paper.
- Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
- Combine Wet Ingredients: In a large bowl, whisk pumpkin puree, sugars, oil, eggs, and vanilla until smooth.
- Bring Together: Slowly stir the dry ingredients into the wet mixture until just combined. Do not overmix.
- Scoop the Batter: Drop tablespoon-sized mounds onto the prepared baking sheets, spacing them 2 inches apart.
- Bake: Bake for 10–12 minutes until the cakes are puffed and a toothpick comes out clean. Cool completely.
- Make the Filling: Beat cream cheese and butter until smooth. Add vanilla and powdered sugar, mixing until fluffy.
- Assemble: Spread or pipe frosting onto the flat side of one pumpkin cake, then sandwich with another cake.
Notes
For variety, roll the edges of the filled pies in chopped nuts, mini chocolate chips, or sprinkles. Store in an airtight container in the fridge for up to 5 days, or freeze for up to 2 months.
