  • 2 large eggs

  • ½ tsp baking powder
  • ½ tsp salt
  • 1 ½ tsp ground cinnamon
  • ½ tsp nutmeg
  • ¼ tsp ground cloves (optional)
  • For the Cream Cheese Filling:
  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • ½ tsp vanilla extract

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) and line a 12-cup muffin pan with paper liners.
  2. Make the filling: In a small bowl, mix softened cream cheese with sugar and vanilla until smooth. Set aside.
  3. Prepare the muffin batter: In a large bowl, whisk pumpkin puree, brown sugar, eggs, oil, and vanilla until combined. In another bowl, whisk flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves. Slowly mix dry ingredients into wet until just combined.
  4. Assemble the muffins: Spoon a tablespoon of batter into each muffin cup. Add a teaspoon of cream cheese mixture in the center. Top with more batter to cover the filling.
  5. Bake: Bake for 22–25 minutes, or until the tops are set and spring back gently to the touch. Let cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

Don’t overmix the batter to keep your muffins light and fluffy. For an extra touch, swirl the cream cheese topping into the muffin batter with a toothpick. You can also sprinkle the tops with cinnamon sugar or pumpkin seeds before baking for added texture.
