Description

These chewy sugar cookie fruit pizzas are a fun, colorful dessert topped with a creamy frosting and fresh fruits. Perfect for parties, holidays, or weekend treats!


Ingredients

For the Cookie Base:

  • 2 ¾ cups all-purpose flour

  • ½ tsp baking powder

  • ¼ tsp baking soda

  • ½ tsp salt

  • 1 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 1 large egg

  • 1 ½ tsp vanilla extract

For the Frosting:

  • 8 oz cream cheese, softened

  • ⅓ cup powdered sugar

  • 1 tsp vanilla extract

For the Toppings:

  • Fresh sliced strawberries

  • Blueberries

  • Kiwi, peeled and sliced

  • Mandarin oranges (optional)

  • Any other favorite fruits (grapes, raspberries, bananas)


Instructions

 

  • Make the Sugar Cookie Base:

    • Preheat oven to 350°F (175°C).

    • In a bowl, whisk together flour, baking powder, baking soda, and salt.

    • In another large bowl, beat butter and sugar until creamy. Add egg and vanilla.

    • Gradually mix in dry ingredients until a soft dough forms.

    • Chill dough for 30 minutes (optional, helps prevent spreading).

    • Scoop and roll into balls, flatten slightly, and place on a lined baking sheet.

    • Bake 10–12 minutes until edges are set. Let cool completely.

  • Make the Frosting:

    • Beat softened cream cheese until smooth.

    • Add powdered sugar and vanilla, beating until fluffy.

  • Assemble the Fruit Pizzas:

    • Spread cream cheese frosting over each cooled cookie.

    • Decorate with fresh fruit. Get creative!

Notes

 

  • You can make the cookie dough up to 2 days in advance and chill.

  • Cookies can be stored (unfrosted) in an airtight container for 3 days.

  • Frost and top with fruit just before serving for best freshness.
