Description

This fresh and flavor-packed Italian focaccia sandwich combines salty prosciutto, creamy mozzarella, zesty pesto, and crisp greens on toasted focaccia bread. It’s quick, elegant, and perfect for lunch, picnics, or an easy dinner.

 


Ingredients

  • 1 loaf focaccia bread, halved horizontally

  • 4 slices prosciutto

  • 4 slices fresh mozzarella (or burrata)

  • 2 tablespoons pesto (store-bought or homemade)

  • 1 handful arugula or baby spinach

  • 4 pieces sun-dried tomatoes, optional


Instructions

Step 1: Preheat oven to 375°F and lightly toast the focaccia halves for 5–7 minutes.
Step 2: Spread pesto generously over the bottom slice of the warm focaccia.
Step 3: Layer fresh mozzarella slices evenly on top of the pesto.
Step 4: Add folded slices of prosciutto over the cheese.
Step 5: Top with a handful of arugula and optional sun-dried tomatoes.
Step 6: Close with the top half of focaccia, press gently, and slice to serve

Notes

  • For extra flavor, warm the prosciutto in a skillet for 30 seconds per side.

  • Swap mozzarella for brie, goat cheese, or provolone.

  • Add fig jam or a drizzle of honey for a sweet twist.

  • Best enjoyed fresh, but can be wrapped and refrigerated for up to 24 hours.
