Ingredients
- 1 cup self-rising flour
- 1 cup milk

- 2 teaspoons vanilla extract
- 2 cups chopped pecans

Instructions
- Preheat the Oven: Set your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- Mix the Batter: In a medium bowl, whisk together self-rising flour, milk, and melted butter until smooth. Pour the batter evenly into the greased baking dish. Do not stir after pouring.
- Prepare the Filling: In a separate large bowl, combine brown sugar, corn syrup, eggs, and vanilla extract. Mix until smooth, then stir in the chopped pecans.
- Layer the Mixture: Carefully pour the pecan filling over the batter in the dish. Again, do not stir—the layers will bake into the perfect cobbler texture.
- Bake: Place the dish in the oven and bake for 45–55 minutes, or until the top is golden brown and set. Let cool for 10–15 minutes before serving.
Notes
For a richer flavor, toast the pecans before mixing them in. To serve, pair with a scoop of vanilla ice cream or whipped cream. This cobbler can also be made ahead and gently reheated in the oven or microwave. For a nut-free version, substitute chopped pretzels or omit entirely.
