Ingredients

  • 4 cups sliced peaches (fresh or frozen)

  • 2 cups blueberries (fresh or frozen)

  • 1 tbsp lemon juice

  • 1 tbsp cornstarch

  • 12 tbsp honey (optional, based on fruit sweetness)

  • 1 cup old-fashioned oats

  • ½ cup whole wheat or almond flour

  • ⅓ cup melted coconut oil or butter

  • ¼ cup honey or maple syrup

  • ½ tsp cinnamon

  • Pinch of salt

  • Optional: ¼ cup chopped pecans or walnuts


Instructions

Step 1: Preheat oven to 375°F and lightly grease an 8-inch baking dish.
Step 2: In a large bowl, toss peaches and blueberries with lemon juice, cornstarch, and honey. Pour into the dish.
Step 3: In another bowl, mix oats, flour, melted oil or butter, maple syrup, cinnamon, and salt until crumbly.
Step 4: Sprinkle the oat mixture evenly over the fruit layer.
Step 5: Bake for 30–35 minutes, until topping is golden brown and fruit is bubbling.
Step 6: Let it cool for 10 minutes before serving.

 

Notes

  • For a gluten-free version, use almond flour and certified gluten-free oats.

  • You can substitute peaches with nectarines or apples.

  • Serve warm with vanilla ice cream, whipped cream, or Greek yogurt.
