Ingredients
- 1 (3.4 oz) box instant vanilla pudding mix
- 1 (3 oz) box orange Jell-O gelatin
- 1 cup boiling water
- 1/2 cup cold water
- 1 (8 oz) tub whipped topping (Cool Whip), thawed
- 1 (24 oz) container cottage cheese
- 1 can (11 oz) mandarin oranges, drained
- 1 cup mini marshmallows
- Zest of 1 orange (optional)
Instructions
- Dissolve powders: In a large mixing bowl, whisk together the boiling water, orange Jell-O, and vanilla pudding mix until completely dissolved and smooth. Add cold water and stir to cool the mixture. Let it sit for 5 minutes to slightly thicken.
- Mix in cottage cheese: Stir in the cottage cheese until evenly combined.
- Fold in whipped topping: Gently fold in the whipped topping until the mixture becomes light and fluffy.
- Add fruit and marshmallows: Stir in drained mandarin oranges, mini marshmallows, and orange zest if using.
- Chill: Cover and refrigerate for at least 1 hour before serving. Stir gently before serving and garnish with extra oranges if desired.
Notes
For a variation, try using cheesecake pudding mix instead of vanilla, or swap out the mandarin oranges for crushed pineapple or strawberries. Always drain the fruit well to avoid excess moisture. This salad tastes even better when chilled overnight!
