Description

This One-Pan Ground Beef and Rice Casserole is the ultimate comfort food made easy. With simple pantry ingredients, minimal prep, and just one pan, you get a hearty, cheesy, family-friendly dinner perfect for busy weeknights.

Ingredients

Scale
  • 1 lb (450 g) lean ground beef
  • 1 cup long-grain white rice (uncooked)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth (or chicken/vegetable broth)
  • 1 can (10.5 oz / 300 g) cream of mushroom or cream of chicken soup
  • 1½ cups shredded cheddar cheese
  • 1 tablespoon olive oil (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika or Italian seasoning (optional)

Instructions

  1. Brown the Beef: Heat a large oven-safe skillet over medium heat. Add ground beef and cook until no longer pink, breaking it apart as it cooks. Drain excess fat if needed.
  2. Add Onion and Garlic: Stir in chopped onion and cook for 3–4 minutes until softened. Add garlic and cook for 30 seconds until fragrant.
  3. Season: Add salt, pepper, and paprika or Italian seasoning. Stir well to combine.
  4. Add Rice and Sauce: Stir in uncooked rice, beef broth, and cream soup. Mix until rice is fully submerged.
  5. Add Cheese: Smooth the mixture into an even layer and sprinkle shredded cheese evenly over the top.
  6. Bake: Bake at 375°F (190°C) for 30–35 minutes, or until rice is tender and cheese is melted and bubbly.
  7. Rest and Serve: Let rest for 5 minutes before serving.

Notes

For extra nutrition, add frozen vegetables like peas or carrots. Use lean meat to reduce excess grease. If making ahead, add a splash of broth before baking to prevent dryness.
