These Nutella Pancake Bites are soft, fluffy mini pancakes filled with warm, melty Nutella. They cook quickly, use simple ingredients, and are perfect for breakfast, brunch, or a fun snack that both kids and adults will love.
Ingredients
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- Pinch of salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter

- Nutella, frozen into teaspoon-sized scoops

Instructions
- Freeze the Nutella: Line a small plate or tray with parchment paper. Scoop teaspoon-sized portions of Nutella onto the parchment and place in the freezer for 10–15 minutes. This helps the Nutella stay in the center of the pancake bites while they cook.
- Mix the Dry Ingredients: In a medium mixing bowl, whisk together the flour, sugar, baking powder, and a pinch of salt until well combined.
- Whisk the Wet Ingredients: In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract until smooth.
- Make the Batter: Pour the wet mixture into the dry ingredients and gently stir until just combined. Do not overmix; a few small lumps in the batter are fine and help keep the pancake bites soft and fluffy.
- Preheat and Grease the Pan: Heat a pancake puff pan or mini muffin pan over medium heat (or preheat the oven to 350°F/175°C if baking). Lightly grease each well with butter or oil to prevent sticking.
- Fill with Batter and Nutella: Add a spoonful of batter to each well, filling it about halfway. Place one frozen Nutella scoop in the center of each well, then cover with a little more batter so the Nutella is fully enclosed.
- Cook the Pancake Bites: If using a stovetop pan, cook until the edges look set and small bubbles appear, then carefully flip each bite and cook until golden brown and cooked through. If using a mini muffin pan, bake for about 10–12 minutes, or until the bites are puffed and lightly golden.
- Serve: Remove the pancake bites from the pan and let them cool slightly. Dust with powdered sugar if desired and serve warm while the Nutella center is still soft and melty.
Notes
For best results, do not skip freezing the Nutella first, as it helps keep the filling inside each bite. Avoid overmixing the batter so the pancake bites stay light and fluffy. Leftovers can be stored in an airtight container in the refrigerator and reheated in the microwave or air fryer for a quick snack or breakfast.
