Ingredients
- 1/2 (3-ounce) package orange flavored gelatin (such as Jell-O®)
- 1/3 cup boiling water
- 1 tablespoon grated orange zest, plus more for garnish
- 1/2 cup fresh orange juice
- 4 ounces cream cheese, at room temperature
- 1 (8-ounce) container frozen whipped topping, thawed
- 1 (9-inch) ready-to-use graham cracker pie crust
- 1/2 cup drained, canned mandarin oranges in water, patted dry
Instructions
- Dissolve the gelatin: In a small bowl, stir the orange gelatin into boiling water until fully dissolved. Let it cool slightly.
- Add citrus: Stir in the fresh orange juice and orange zest to the gelatin mixture and set aside.
- Beat cream cheese: In a large bowl, beat the softened cream cheese until smooth and creamy.
- Combine: Gradually add the orange mixture to the cream cheese, beating on low until completely smooth.
- Fold in whipped topping: Gently fold in the thawed whipped topping until well combined. Do not overmix.
- Assemble: Pour the filling into the graham cracker crust and smooth the top with a spatula.
- Decorate: Top with mandarin oranges and a sprinkle of extra orange zest, if desired.
- Chill: Refrigerate for at least 4 hours, or until fully set. Slice and serve cold.
Notes
For the best texture, make sure your cream cheese is completely softened before mixing. You can swap in light cream cheese and sugar-free gelatin for a lower-calorie version. The pie can be made a day in advance and kept chilled until ready to serve.
