Ingredients
- 8 oz cream cheese, softened
- 2 cups powdered sugar
- 1 1/2 cups shredded sweetened coconut (plus more for rolling)
- 1 teaspoon vanilla extract

Instructions
- Beat the Cream Cheese: In a large bowl, beat softened cream cheese until smooth and creamy.
- Add the Sugar: Slowly mix in powdered sugar until fully combined and fluffy.

Notes
If the mixture is too soft to roll, chill it longer or add a bit more powdered sugar. Use slightly damp hands to prevent sticking while rolling.
