Ingredients
Scale
- 3 1/2 cups all-purpose flour (or bread flour for chewier texture)
- 2 1/4 tsp instant yeast (or active dry yeast)
- 1 1/4 cups warm water
- 1 tbsp sugar (or honey)
- 1 tsp salt
- 8 mozzarella sticks (string cheese works great)
- 8 cups water
- 1/3 cup baking soda
- 2 tbsp melted butter
- Coarse salt for topping
Instructions
- Make the Dough: In a bowl, mix warm water, sugar, and yeast. Let sit until foamy. Stir in flour and salt, then knead for 5–7 minutes until smooth. Let rise 45 minutes until doubled.
- Prepare the Cheese: Cut mozzarella into sticks if not using string cheese.
- Shape the Pretzels: Divide dough into 8 pieces. Roll into ropes, flatten slightly, place cheese inside, and pinch dough around to seal. Shape into pretzels.
- Baking Soda Bath: Boil 8 cups of water with baking soda. Drop pretzels in for 30 seconds, then remove to a baking sheet.
- Bake: Brush pretzels with melted butter, sprinkle with coarse salt, and bake at 425°F (220°C) for 12–15 minutes until golden brown.
- Serve: Let cool slightly and enjoy with your favorite dipping sauce.
Notes
Seal the dough well around the cheese to prevent leaks. For a twist, try cheddar, pepper jack, or add garlic butter on top after baking. Pretzels can be frozen and reheated in the oven for a quick snack.
