Description

These Matcha Jasmine Cookies are a delightful blend of earthy matcha green tea and delicate floral jasmine.   • 1 1/2 cups (190g) all-purpose flour
  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 1 large egg yolk
  • 1 1/2 tablespoons matcha powder (culinary grade)
  • 1 tablespoon jasmine tea leaves, finely ground
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Grind the Jasmine Tea: Using a spice grinder or mortar and pestle, grind jasmine tea leaves into a fine powder. Set aside.
  2. Cream the Butter and Sugars: In a large mixing bowl, beat softened butter, granulated sugar, and brown sugar until pale and fluffy, about 2–3 minutes.
  3. Add Egg Yolk and Vanilla: Mix in the egg yolk and vanilla extract until fully combined.
  4. Mix Dry Ingredients: In a separate bowl, whisk together flour, baking powder, salt, matcha powder, and ground jasmine tea.
  5. Combine Wet and Dry: Gradually mix dry ingredients into the butter mixture until a soft dough forms. Do not overmix.
  6. Shape the Dough: Roll dough into a 2-inch diameter log, wrap in plastic wrap, and refrigerate for 30 minutes.
  7. Slice and Bake: Preheat oven to 350°F (175°C). Slice dough into 1/4-inch rounds, place on a parchment-lined baking sheet, and bake for 12–14 minutes until edges are set but not browned.
  8. Cool and Serve: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack. Serve as is, or dust with powdered sugar for a delicate finish.

Notes

For a more intense floral aroma, infuse melted butter with jasmine tea before chilling and using in the recipe. Avoid overbaking to keep the cookies tender and maintain their vibrant green color.
