Ingredients
- Browned Butter: 1 cup plus 3 tablespoons unsalted butter
- Topping:
- 1 cup all-purpose flour
- 3/4 cup firmly packed brown sugar
- 1 1/2 teaspoons ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon salt
- 1/2 teaspoon maple extract
- Cake:
- 2/3 cup firmly packed brown sugar
- 1 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 large eggs, at room temperature
- 1/2 cup pure maple syrup
- 1 cup full-fat plain Greek yogurt, at room temperature
- 1 teaspoon vanilla extract
- 1 teaspoon maple extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
Instructions
- Brown the Butter: Melt 1 cup plus 3 tablespoons unsalted butter in a saucepan over medium heat. Cook, stirring often, until golden brown and nutty in aroma. Let it cool slightly before using.
- Make the Streusel Topping: In a bowl, combine flour, brown sugar, cinnamon, nutmeg, and salt. Pour in 6 tablespoons of the browned butter and maple extract, mixing until the texture becomes crumbly. Set aside.
- Prepare the Cake Batter: In a large bowl, whisk brown sugar, salt, cinnamon, and nutmeg. Add eggs, maple syrup, Greek yogurt, vanilla extract, and maple extract. Mix until smooth and creamy.
- Add the Dry Ingredients: Whisk together flour, baking powder, and baking soda in a separate bowl. Gradually add to the wet mixture, stirring just until combined. Be careful not to overmix.
- Assemble the Cake: Pour half of the batter into a greased 9-inch round or square baking pan. Sprinkle a thin layer of the streusel topping. Add the remaining batter, then top with the rest of the streusel.
- Bake: Bake at 350°F (175°C) for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and Serve: Let the cake cool for at least 20 minutes before slicing. Serve warm or at room temperature for the best flavor.
Notes
You can swap maple syrup for honey if desired, though the flavor will be lighter. Try adding chopped pecans or walnuts to the streusel for extra crunch. This cake pairs perfectly with hot coffee or spiced tea and stores well for up to 4 days at room temperature.
