Tender carrots are coated in a glossy maple syrup glaze for a simple yet elegant side dish that takes less than 30 minutes to make. Ideal for weeknight dinners or holiday gatherings, this recipe turns ordinary carrots into something special.
Ingredients
- 1 pound carrots, peeled and sliced into even sticks or rounds
- 2 tablespoons butter (or vegan butter)
- 3 tablespoons pure maple syrup
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon fresh thyme or parsley, chopped (optional, for garnish)
Instructions
- Prepare the Carrots: Peel the carrots and cut them into even-sized sticks or rounds. If using baby carrots, simply rinse them well.
- Blanch the Carrots: Bring a pot of salted water to a boil. Add the carrots and cook for 3–4 minutes until just tender. Drain and rinse under cold water.
- Make the Maple Glaze: In a large skillet, melt the butter over medium heat. Stir in the maple syrup, salt, and pepper until combined.
- Glaze the Carrots: Add the carrots to the skillet, tossing to coat them evenly in the glaze. Cook for 8–10 minutes, stirring occasionally, until the glaze thickens and the carrots are tender and shiny.
- Serve: Transfer the glazed carrots to a serving dish, drizzle with any remaining sauce, and sprinkle with fresh thyme or parsley if desired. Serve warm.
Notes
For a roasted variation, toss carrots with the glaze and bake at 400°F (200°C) for 20–25 minutes. Add cinnamon or orange zest for extra flavor. Perfect for pairing with roasted meats, chicken, or vegetarian dishes.
