Ingredients

  • 4 boneless, skinless chicken thighs (or breasts)
  • 3 cups cubed butternut squash (1-inch pieces)
  • 1 medium red onion, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons pure maple syrup
  • 2 tablespoons Dijon mustard
  • 1 teaspoon fresh thyme (or ½ teaspoon dried)
  • Salt and pepper, to taste
  • Optional garnish: fresh thyme sprigs, drizzle of maple syrup

Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Prepare the Glaze: In a small bowl, whisk together maple syrup, Dijon mustard, olive oil, thyme, salt, and pepper.
  3. Coat the Chicken: Place the chicken in a large bowl and pour half of the glaze over it. Toss to coat and let it rest for 10 minutes while you prepare the veggies.
  4. Season the Vegetables: Spread the cubed butternut squash and sliced onions on the baking sheet. Drizzle with olive oil, season with salt, pepper, and thyme, and toss to coat.
  5. Assemble the Sheet Pan: Arrange the glazed chicken thighs on one half of the pan and the vegetables on the other. Brush any remaining glaze over the chicken.
  6. Roast Everything: Bake for 25–30 minutes, flipping the squash halfway through. The chicken should reach 165°F (75°C) and the squash should be golden and tender.
  7. Optional Broil: For extra color, broil for 2–3 minutes at the end.
  8. Serve: Transfer everything to a platter, drizzle with pan juices, and garnish with fresh thyme or a touch of maple syrup.

Notes

For extra variety, swap the butternut squash for sweet potatoes or acorn squash. You can also use tofu instead of chicken for a vegetarian version. Store leftovers in an airtight container for up to 4 days and reheat in the oven at 350°F until warmed through.
