These Lemon Oatmeal Bars are the perfect mix of zesty lemon and cozy oats. A chewy, golden crust and crumbly topping sandwich a sweet-tart lemon filling. Easy to make and full of flavor, they’re great for snacking, sharing, or treating yourself!

- Cooking spray (for greasing the pan)
- 1 cup brown sugar
- ½ cup unsalted butter, softened
- 1 ⅓ cups all-purpose flour
- 1 cup rolled oats
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 (14-ounce) can sweetened condensed milk
- ¼ cup lemon juice (fresh is best!)
- 1 teaspoon lemon extract
- 1 teaspoon almond extract
Instructions
- Preheat and Prep: Preheat oven to 350°F (175°C). Grease an 8×8-inch pan with cooking spray. Optional: line with parchment for easy removal.
- Make the Crumb Mixture: In a large bowl, cream together the butter and brown sugar. Stir in flour, oats, baking powder, and salt until crumbly and well mixed.
- Prepare the Lemon Filling: In a medium bowl, whisk together sweetened condensed milk, lemon juice, lemon extract, and almond extract until smooth and slightly thickened.
- Assemble: Press ⅔ of the crumb mixture into the bottom of the pan. Spread lemon filling evenly on top. Crumble the remaining oat mixture over the filling and lightly press down.
- Bake: Bake for 25–28 minutes, or until top is lightly golden. Let cool completely before slicing.
Notes
- For a twist, stir chopped almonds or shredded coconut into the topping before baking.
- These bars freeze beautifully. Wrap individually and freeze up to 2 months.
- Double the recipe and use a 9×13-inch pan if baking for a crowd.
