Description

This Turkey Pot Pie is the ultimate way to transform holiday leftovers into a golden, flaky masterpiece. Featuring a buttery puff pastry crust and a rich, velvety filling packed with tender turkey and garden vegetables, it is a warm, cozy hug in a bowl that the whole family will love.

Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 1 medium onion, finely diced
  • 2 large carrots, peeled and sliced into small rounds
  • 2 stalks celery, sliced thin
  • 1/4 cup all-purpose flour
  • 2 cups chicken or turkey broth (low sodium)
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 3 cups cooked turkey, shredded or cubed
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 sheet frozen puff pastry, thawed
  • 1 large egg, beaten with a splash of water (for egg wash)

Instructions

  1. Sauté the Aromatics: Heat butter in a large skillet over medium heat. Add onions, carrots, and celery, cooking for 5-7 minutes until softened.
  2. Create the Roux: Sprinkle flour over the vegetables and stir constantly for 1-2 minutes to cook out the raw flour taste.
  3. Build the Gravy: Slowly pour in broth while whisking to prevent lumps. Simmer until thickened, then stir in heavy cream, thyme, salt, and pepper.
  4. Fold in Fillings: Add the cooked turkey, frozen peas, and frozen corn. Let simmer for 1 minute, then remove from heat.
  5. Assemble: Transfer filling to a 9-inch pie plate (or leave in an oven-safe skillet). Place thawed puff pastry over the top, trim or fold edges, and cut small slits for steam.
  6. Garnish and Bake: Brush the pastry with egg wash. Bake at 400°F for 25-30 minutes until the crust is high and deep golden-brown.

Notes

For the best rise, ensure your oven is fully preheated so the puff pastry hits high heat immediately. Avoid handling the dough too much with warm hands to keep the butter layers cold. If you are using a cold filling made in advance, add 5-10 minutes to the baking time.
